Now that the Thanksgiving Day tryptophan has wore off and you have laid the beat-down on that old lady for the last Black Friday Furby, it’s time to turn your attention to gameday — and more importantly, what the heck are you going to eat.

If you’re anything like me, you have a mountain of leftover turkey on hand, but the prospect of turkey sandwiches for a week can be a little unappealing. Well, have no fear. I have the perfect thing to break the monotony of the sandwiches, use up some of that excess turkey, and feed not just you, but also your buddies on gameday.

Today we will make a very simple yet tasty Turkey and Sweet Potato Shepherds Pie.

So let’s get cooking!

What you need 

For potatoes

  • 1-1/2 lbs sweet potatoes, peeled, diced
  • 1 clove garlic
  • 1/2 cup 2% milk
  • 1/4 cup chicken broth
  • 2 tbsp sour cream
  • Salt and pepper to taste
  • 2 tbsp butter

For filling

  • 1-1/2 lb leftover turkey chunks
  • 1 tsp olive oil
  • 1 medium onion, diced
  • 1 celery stalk, chopped
  • 1 parsnip, diced
  • 2 cloves garlic, diced
  • 8 oz mushrooms, diced
  • 10 oz frozen mixed vegetables
  • 2 tbsp flour
  • 1 cup fat-free, low-sodium chicken broth
  • 2 tsp tomato paste
  • 1 tsp Worcestershire sauce
  • 1 tsp freshly chopped rosemary
  • 1 tsp chopped thyme
  • Salt and pepper
  • Paprika

To the Kitchen!

In a large pot, boil peeled sweet potatoes and garlic until soft. Drain and mash with sour cream, broth, milk, salt, pepper, and butter.

Chop turkey chunks, ensuring no large pieces remain.

In a large skillet over medium heat, heat the olive oil. Once warm, add onion, celery, parsnip, and mushrooms. Cook until they begin to soften, about 5 minutes. Add garlic and cook about 3 minutes. Add the flour and stir constantly until oil and flour combine into a smooth paste. Add vegetables, broth, tomato paste, and Worcestershire sauce. Increase heat until liquid begins to boil and sauce starts to thicken. Turn off heat and add turkey. Allow to sit for about 10 minutes; sauce will thicken and warm turkey without overcooking it. Meanwhile, preheat oven to 350°F.

Dump filling into 9 x 13-inch baking dish and spoon mashed sweet potatoes over top of the filling. Smooth out into uniform layer. Bake for 30-45 minutes until sweet potatoes take on a lovely golden-brown color.

Boom! That was easy, wasn’t it? And trust me, it’s going to be outstanding!

i wonder when the NFL will weigh in on the Suh kick, it's fairly obvious he intentionally kicked him, maybe not in the nuts but he definitely kicked him

Greg Jennings unlikely to play. not surprised but i would like to see him get into some game action so he is ready and back in timing come playoff time

It just gets worse for the Iggles.  Vick AND McCoy ruled out for Monday night.  So we have the Eagles minus their two most marketable stars vs. the 2-8 Panthers.  WOOHOO!!! MONDAY NIGHT FOOTBALL!!!

  but if it weren't for his sanctions he'd still be coaching and odds are they would have blown one or two games this year. maybe they were thanking for fucking up so they could get a real coach as much as i dislike Meyer

  no just Thanksgiving stuff, i had 3 Thanksgiving dinners this week, so if i never see a turkey again i'll be good. the Winery is going to be next year at the earliest, we are looking at 6 months just for the license to get approved
