Gameday Grub: Prepare thy Croquettes

Now you’ve gone and done it! You’ve overslept and with the game just an hour away, there is no way you’re going to get a decent meal ready for gameday!

Not so fast, my friend, as our friend Lee Corso would say.

Today we are going to be making something simple yet tasty, and odds are you have all the ingredients in your pantry already. In fact, these tasty treats are so easy, you don’t even need the whole hour to make them. Today we are making Tuna Croquettes with canned (that’s right, canned) or pouched tuna and a couple of really tasty dipping sauces.

What you need

Croquettes

  • 1 (7-ounce) pouch albacore tuna, drained well and shredded by hand
  • 2 green onions, chopped fine
  • 1/2 cup shredded carrots
  • 2 teaspoons Dijon mustard
  • 2 large eggs, beaten
  • 1 teaspoon freshly squeezed lemon juice
  • 1 teaspoon cayenne pepper
  • 1 teaspoon paprika
  • 1/4 teaspoon tumeric
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 3/4 cup panko bread crumbs, divided
  • Olive oil, for sautéing

Dipping sauces

Tartar sauce

  • 4 tablespoons sour cream
  • 2 tablespoons mayonnaise
  • 1 tablespoon horseradish sauce
  • 1 tablespoon capers
  • Black pepper
  • Squeeze of lime juice

 Remoulade

  • 1 tablespoon chopped fresh parsley leaves
  • 2 tablespoons finely chopped green onions, white and green parts
  • 2 tablespoons sweet pickle relish
  • Dash garlic powder
  • 1/2 cup mayonnaise
  • 1 tablespoon olive oil
  • 2 teaspoons fresh lemon juice
  • 1 teaspoon Dijon or Creole mustard
  • Few drops Worcestershire sauce
  • Your favorite hot sauce to taste
  • Pepper, to taste

To the kitchen

If using canned tuna instead of pouched, place the tuna in a wire mesh strainer, rinse off the oil ,and allow it to drain for at least 15 minutes.

Place tuna, onions, mustard, eggs, lemon juice, cayenne, paprika, tumeric, salt, pepper, and 1/4 cup of bread crumbs into medium-sized mixing bowl and stir to combine. Divide the mixture into 8 rounds and set aside on a parchment-lined half sheet pan. Allow to rest for 15 minutes. Place the remaining bread crumbs into a pie plate. One at a time, coat each round in the panko on all sides.

Heat enough olive oil to cover the bottom of a 12-inch saute pan and heat over medium heat until shimmering. Add the croquettes and cook 2 to 3 minutes on each side or until golden brown. Remove to a cooling rack set over a half sheet pan lined with paper towels. Allow to cool for 2 to 3 minutes before serving.

To make the sauces, combine all the ingredients into a bowl and mix; it really is that simple. Serve with a side salad and enjoy.

so with Maryland and Rutgers headed to the BIG 10 who joins them and makes it a 16 team conference? my money is on South Florida or Central Florida, maybe both and possibly make a run at Oklahoma or Oklahoma State

    yeah i feel it. he has no lose ends now..i feel he could have spread the players around the top 4-5 teams and gathered picks from all of them. this way..it spreads the wealth, and you dont have one team having a second starting line up on their bench....but i agree its whatever. it is a prize league..but i wont see nate till the playoffs.  

 

though the offer made to me sucked in comparison btw lol

I think Rourke is purposely just trying to screw with the league now.

He basically gave Nate a powerhouse going into the playoffs, but it's not a lock or anything.
