Gameday Grub: Prepare Thy Halibut

After a surprise bye week, we are back in business. I know you missed me — don’t lie.

We are going to get back into the swing of things and get back into the kitchen. Today we go away from our accustomed terrestrial fare and look to the sea. We take our inspiration from the Far East we prepare Thai-Style Halibut. Now don’t for one second think that this is an authentic Thai dish; it’s about as Thai as apple pie. Nevertheless, the flavors of this sumptuous dish will make you feel like you just took a trip to Bangkok.

Enough of this chatter. Let’s get cooking!

What you need

  • 3 teaspoons vegetable oil, divided
  • 4 shallots, finely chopped (about 3/4 cup)
  • 2-1/2 teaspoons red curry paste* or 2 teaspoons curry powder
  • 2 cups low-sodium chicken broth
  • 1/2 cup light coconut milk
  • 1/2 teaspoon salt, plus 1/4 teaspoon, plus more for seasoning
  • 4 (6-ounce) halibut fillets, skin removed
  • Baby bok choy
  • 1 cup bean sprouts
  • 2 cups whole sugarsnap peas
  • 1/2 cup coarsely chopped fresh cilantro leaves
  • 2 scallions, green part only, thinly sliced
  • 2 tablespoons fresh lime juice
  • Freshly ground black pepper
  • 2 cups cooked brown rice

*Available in the Asian section of most supermarkets

To the kitchen!

Cooking the brown rice is the most time-consuming step, so cook it first according to the package directions.

In a large sauté pan, heat 2 tablespoons of oil over moderate heat. Add the shallots and cook, stirring occasionally, until they start to brown (3 to 5 minutes). Add the curry paste and cook, stirring, until fragrant, about 30 seconds. Add the chicken broth, coconut milk, and 1/2 teaspoon salt; simmer until reduced to 2 cups, about 5 minutes.

Season the halibut with 1/4 teaspoon salt. Arrange the fish in the pan and gently shake the pan so the fish is coated with the sauce. Cover and cook until the fish flakes easily with a fork, about 7 minutes.

In a a second sauté pan, add 1 tablespoon of the oil and heat it over medium-high heat. After allowing the oil to come to temp add the bok choy, sugarsnap peas, and the bean sprouts. Stir fry for 1 to 2 minutes.

Arrange piles of bok choy, sugarsnap peas, and bean sprouts on the bottoms of four soup plates. Top with fish fillets. Stir cilantro, scallions, and lime juice into the sauce and season to taste with salt and pepper. Ladle the sauce over the fish and serve with rice.

I do not like the short week. if they are going to do it, do it like they have in previous years, start doing TNF on week 8. They started right off the bat and the match ups have been horrible. I also do not like the short week for teams who play them. they are given no time to prepare from Sunday to Thursday and I think it shows

  Because I want to be able to watch as many games as possible, and clustering them all in the early slot makes that really hard. Why not play half of divisional games (roughly) in the early slot and half in the later slot to maximize exposure?
